For the Pasta filling:
– Pork loin 200g
– Mortadella 100g
– Egg 1
– Prosciutto crudo 100g
– Parmesan 100g
– Nutmeg (just a pinch)
– Salt & Pepper
For the broth:
– Half hen
– Beef mussel 200g
– Carrot 1
– Onion 1
– Celery stick 2
– Pepper 10g whole
For the Filling:
Start to pan fried really quickly the Pork loin.
At this point you can mix all the ingredients together.
Place all the ingredient in a mixer and then blend until smooth.
Use the mix to fill the tortellini.
Classic tortellini shape is small and cute, you must eat them with a spoon in one bite.
For the Broth:
Place all the ingredients into the pot with 2 liters of water.
Broil for about two hours until all the flavor will be released into the broth.
Never boil the broth too hard, it should always cook on slow heat.
Cook yours tortellini into the broth, grate parmesan on top if you like.
